Selling Meat by Weight at the Farm Gate: Deposits, Weigh-Ins and Getting Paid
You can't price a lamb pack before it's cut, and a no-show on cut stock hurts. Here's how deposit-now, weigh-at-pickup ordering works, and why meat is the most open category on the map.

Nobody who sells meat from the farm needs the problem explained to them, but here it is anyway: you cannot price a lamb pack before it's cut. The scales decide. Which leaves gate sellers juggling some version of the same three headaches: quoting "roughly $180, we'll square up on the day", chasing the difference in cash at the gate, and the worst one: cutting an animal to order for someone who never turns up.
That last one isn't a lost sale. It's product you committed, hung, cut and packed, gone begging because a stranger changed their weekend plans.
The order flow that fixes it

- A spoken 4-digit code closes the order: they read it out, you mark it collected, the payment's captured, and both sides have an official receipt.
Cash and EFT at the gate still work fine if that's how a buyer wants to pay. Your stall page shows exactly which payment methods you take. But for cut-to-order meat, money-down changes who turns up.
What it costs, plainly
There's no monthly fee to take payments on any plan, including Free. When a buyer actually pays you, a small SideStall service fee plus card processing comes out, and every order shows the fees and your exact take-home, so there are no payout surprises. Cancelled or refunded orders cost no SideStall fee. An order that never happens costs you nothing, which is more than can be said for a no-show on a cut side.
The compliance bit
Meat is the most regulated thing you can sell at a gate, and your accreditation and processing arrangements come first: nothing about an ordering app changes what your state's food authority requires.
