Roast Pumpkin and Cauliflower with Black Garlic and Honey
A winter tray bake that converts cauliflower sceptics, with a note on which stalls around the country may have each ingredient this month.

This is the dish that converts people who think they dislike cauliflower. Roasting does the work, and the honey and black garlic together give you something much darker and more savoury than the ingredient list suggests.
It is a side dish that regularly gets eaten as the whole dinner, standing up, off the tray.

You will need
Serves four as a side, or two people who have had a day.
- Pumpkin, about 1kg · may be available from Hoskin Harvest near Lewiston SA, KQ Produce near Deanmill WA, or From the garden near Glass House Mountains QLD
- Cauliflower, one head · may be available from Parawanga Produce near Whites Valley SA

- Extra virgin olive oil · may be available from Ampale Olives near Willunga SA
- Salt, pepper, and a lemon if you have one
If you cannot find black garlic, ordinary garlic roasted whole in its skins and squeezed out will do a similar job. It will be sweeter and less treacly, and nobody will complain.
Method
- Heat the oven to 220°C.
- Peel and cube the pumpkin into rough 3cm pieces. Break the cauliflower into florets and keep the tender inner leaves: they crisp better than the florets do and it is a crime to bin them.
- Toss everything with a good glug of oil, salt and pepper, and spread it across two trays rather than one. Crowding is what makes roast vegetables sad and steamy.
- Roast for 25 minutes.
- Meanwhile, mash the black garlic with the honey and another spoon of oil into a loose paste.
- Pull the trays out, spoon the paste over, turn everything through it, and give it another 10 to 15 minutes until the edges catch.
- Squeeze lemon over at the end. It lifts the whole thing.
Leftovers are good cold, and better piled on toast with something salty.
